My family loves this recipe for yellow squash fritters and I cannot make enough of them.  We like them with a meal or just as a snack with ranch dressing or salsa.  They are good dipped in just about anything.  You could double this recipe if you want to make a lot or even cut it in half to make just a few fritters to try them.  You might also like to try our recipe for country corn fritters.

Yellow Squash Fritters Ingredients needed:

Yellow summer squash, do not peel

All-purpose flour

Yellow cornmeal

Onion

Salt

Black pepper

Garlic powder

Egg

Buttermilk or regular milk

Oil for frying

This is a wonderful way to use your yellow squash from the garden. The flavor is great and they are a wonderful addition to any meal. Can be an appetizer or a side dish.   • 2 cups shredded or grated yellow summer squash do not peel
  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1/3 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 egg
  • 2/3 cup buttermilk or regular milk
  • Oil for frying about 1/2 cup
  • Whisk together the flour, cornmeal, chopped onion, salt, black pepper and garlic powder in a large bowl. Stir in shredded squash, egg and buttermilk. Drop by spoonfuls into hot oil. Brown on each side. Drain on paper towels.
