Welcome to the weekend, my friends! The sun is shining after a couple of days of clouds and rain and it’s making me smile as I write this note to you today.
ON THE BLOG this week: Sweet corn, crunchy bacon, juicy tomatoes, peppery arugula, and fresh basil are combined in this BLT Corn Salad to create an unforgettable combination of fresh flavors in each bite.
Creamy deviled egg filling creates the dressing that coats each bite of this Deviled Egg Potato Salad. Chunks of potato and hard-boiled eggs are tossed with the dressing to make the ultimate potato salad for anyone who loves deviled eggs.
What I’m CRAVING: BEEF! Oh my goodness, I’m craving steak salads and steak bites, meatloaf, and stroganoff. I saw these BBQ Beef Kabobs the other day too and they made my mouth water! Clearly it’s grilling season and I need to stock up on more beef for my meat-loving family asap.
My FAVORITE THING this week is this very simple dishwasher magnet. How many ways can I state my LOVE for this trivial little reversible magnet? We’ve had hassles this year with younger kids not realizing whether the dishwasher was clean or dirty and dumping their dirty bowls on top of clean dishes. This little magnet? It’s solved that issue. And because it is reversible, there’s never a doubt which side is up.
What I’m WATCHING: The series finale for Psych. This show turned out to be about 100x better than I expected it to be. I enjoyed it so much. I laughed at the absurdity sometimes, but it never disappointed. The character development is excellent throughout the series.
What I’m READING: Everyday Dinners by Jessica Merchant. This is my friend Jessica‘s new cookbook and it is filled with so much deliciousness! I have several recipes flagged to try soon: Chili Lime Shrimp Taco Salad, Easy Breakfast Tacos, Crispy Orange Cauliflower (oh my GOSH, this looks so good!), and Burrata Baked Ziti are at the top of my list right now. If you’re looking for more dinner inspiration, you can’t go wrong picking up this cookbook.

Wishing you a beautiful week full of little things that make you smile!
