This easy raisin pecan loaf cake is always a hit when I serve it.
I love this loaf cake because it’s super easy. Plus, it makes two loaf pans so you have an extra to give to a neighbor or a friend or serve them both! The cake is made with a yellow cake mix and delicious spices. You probably have everything on hand already. I love when I can just whip up a dessert with what is in my pantry. When you need a no-fuss dessert…this is it! This loaf cake is also wonderful with coffee in the morning.
Ingredients Needed for Raisin Pecan Loaf Cake
Yellow cake mix
Eggs
Applesauce
Pecans
Raisins
Milk
Vegetable oil
Cinnamon
Nutmeg
Allspice
Recipe Notes: If you’re not a fan of pecans, you can certainly use any nuts you like. We like this cake sprinkled with powdered sugar but it would also be great with this glaze.

Raisin Pecan Loaf Cake

Servings: 8 servings
- 1 yellow cake mix
- 3 eggs
- 1 cup of applesauce
- 1/2 cup of pecans chopped
- 1/2 cup of raisins
- 1/2 cup of milk
- 1/4 vegetable oil
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon of allspice

Mix all ingredients together and pour in 2 greased 8 in X 4 in loaf pans. Bake on 350 for 40 minutes.

You can add a powdered sugar glaze or just sprinkle with confectioners sugar.
