This baked coconut french toast is a recipe your family will love.
Start your day with delicious baked coconut French toast. So easy to make and since it’s baked you can make more at one time. I love the ease of baking this French toast, since it is not nearly as messy. I made this using Hawaiian bread which was fabulous, but you can use any bread you chose.
Baked Coconut French Toast Ingredients needed:
bread (I used Hawaiian Bread)
eggs
whipping cream
cinnamon
vanilla
sweetened shredded coconut
Strawberries to garnish (optional)
This French toast is super versatile, you could easily make this without the coconut and top it with pecans and powdered sugar, blueberries and honey, or any topping you prefer. It’s a wonderful base recipe that you can do so much with.
Using your oven to make French toast really does save you so much time. If you are serving French toast for a larger crowd you can make quite a bit at one time.
We love homemade syrups and these would be a perfect addition to this delicious French toast!

Baked Coconut French Toast
This french toast is absolutely delicious! So easy to make, and since it’s baked you can make more at one time. Perfect for brunch too! We love it garnished with strawberries.
Servings: 2 servings
- 4 slices of bread
- 3 eggs
- 1/2 cup of whipping cream
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of vanilla
- 1.5 cups of sweetened shredded coconut may need more if you love coconut
- Strawberries to garnish optional

Grease a baking sheet and preheat oven to 475. Beat eggs together in a bowl, add whipping cream, cinnamon and vanilla together. Mix together well. Lay a slice of bread in mixture, make sure it soaks evenly on both sides. Coat with coconut on both sides and put on baking sheet. Continue with all slices of bread.

Bake for 5 minutes and removed and flip to other side and bake another 5 minutes. Remove and cut into triangle slices. Top with strawberries and syrup. You could also add powdered sugar.
I greased the pan and then put down some shredded coconut for my slice of bread. It was difficult to coat each side with coconut, so I put some down on the pan, set my soaked slice on it and then coated the top of the piece with coconut.
