Kettle Chips are so addictingly delicious. We had to buy multiple bags at the grocery store every week because everyone in the family would munch on them. Once we learned how to make them, we simply couldn’t go back to store-bought! Freshly fried kettle chips are utterly divine and cannot compare to store-bought. Some things are just worth the extra effort, and homemade kettle chips is at the top of that list. You might want to make them while the kids are out of the house to make sure you get your fair share, otherwise these will be gone in 5 minutes flat!
How to Slice Potatoes for Homemade Kettle Chips:
A mandolin is the best way to go for evenly thin potato slices. You can also use a food processor or a knife, just be sure to carefully slice them as thin as possible.
Potatoes:
You want to be sure to use russet potatoes. They are higher in starch and will hold up best for freshly fried kettle chips.
Seasoning:
You will make more seasoning than necessary, so don’t feel bad if you don’t use it all! Not all of the seasoning will stick, so it is better to have too much than not enough.
Recommended Oils for Frying:
You can use either vegetable oil, canola oil, or peanut oil.
Serving Suggestions:
With these amazing seasonings, you can simply eat these kettle chips plain because they are just that amazing! However, if you want to take that flavor over the top, try dipping in French onion dip.
Storage Instructions:
Store any leftovers in an airtight container for up to 1 week. Left much longer than that and they will start to go stale. However, we doubt you’ll have any leftovers past day 1!

Ingredients
- 2 pounds potatoes , russet variety
- 6-8 cups oil for frying
Garlic Parmesan Seasoning
- 1/4 cup parmesan cheese , finely grated
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon dried parsley
Cracked Pepper Sea Salt Seasoning
- 2 tablespoons sea salt
- 1 tablespoon pepper , freshly cracked
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
Sour Cream and Onion Seasoning
- 2 tablespoons buttermilk powder
- 2 tablespoons dried dill
- 1 tablespoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1/2 teaspoon sugar
Instructions

Wash potatoes. Thinly slice the potatoes using a mandolin, knife or food processor and as you slice them, add them into a bowl of cold water.

Heat the oil in a heavy duty pan until the oil reaches 350 degrees Fahrenheit.

Rinse the starches off the potatoes and drain off all water. Place the potato slices on a towel and dry thoroughly.

Working in batches, place a handful of the slices safely into the oil and fry. Do so by lowering the potatoes into the oil with a metal slotted spoon.

Once they have turned a golden color, about 60-90 seconds, remove from oil and place onto a paper-towel lined cookie sheet.

Season immediately while the chips and oil are still hot to ensure as much sticking of the seasonings as possible. Enjoy!
Notes
The larger the batch of chips that go in the oil, the longer it will take to cook. Smaller batches work better.
