Welcome to the weekend, my friends. I have a couple of friends visiting from Phoenix today and I’m so happy that they’re here at the perfect time to enjoy the crisp mornings and gorgeous fall colors. We’re going to spend the weekend wandering around my beloved village, eating whatever we’re craving, and just taking it easy.

ON THE BLOG this week: Crispy Oven Baked Chicken with juicy meat and crisp, flavorful skin can be on your dinner table with about 5 minutes’ worth of effort! This crispy chicken is made in the oven without any breading at all; the only ingredients you need are the chicken, a drizzle of oil, salt, and pepper.

I know–light and fluffy aren’t two words you’d typically think of to describe Whole Wheat Pancakes, which have a reputation for being dense and chewy. Light and fluffy is, however, the perfect way to describe this Whole Wheat Pancakes Recipe.

Buttermilk Syrup is creamy, rich with brown sugar, buttermilk, and butter, and somewhat reminiscent of caramel sauce. However, it isn’t nearly as sweet as a traditional caramel sauce and it’s heaven poured over a stack of hot pancakes.

What I’m CRAVING: Burrata! If you haven’t tried this ultra-creamy cheese yet, you are missing out. I love it on salads, with garlic bread, tossed into pasta, pretty much every way I’ve ever tried it. These photos of my friend Joanne’s Tomato Burrata Salad are a perfect example of my favorite way to enjoy Burrata.

My FAVORITE THINGS this week are my kitchen timers. I’ve probably shared them with you before, (we’ve been using them for at least 5+ years) but since I just ordered an additional set this week, it’s worth mentioning again. I love love love them.

They’re magnetic, so I use them to pin the recipe for whatever I’m cooking/baking to the fridge. That way, if my chicken needs an hour, but the vegetables only need 15 more minutes, and something else is chilling in the fridge for 30 minutes, I know which recipe the timer is notifying me for. (Maybe that’s overkill for some of you, but my hyper-organized heart loves it.)

I know this is a lot of rambling about a cheap little timer, but we use these timers all over the house. Plus, at about $3 each, I don’t stress it if one gets broken. The kids use them for timing school assignments, video game time, even their morning showers have a timer. (I’m looking at you, kid-who-shall-not-be named.) We use them so much, we have them all over the house and in the camper too.

What I’m WATCHING: I started watching NCIS again. I was bummed when so many of my favorite characters left the show that I took a long break from it. A friend mentioned it the other day though and I picked it up again in Season 16. It isn’t exactly the same, but it’s still a great show and I’m enjoying it. 

What I’m READING: Full Scoop by Janet Evanovich and Charlotte Hughes. This series falls into the bubblegum reads category for me. The books almost always make me laugh and I usually read them lightning fast. I’m not as big a fan of them as I am of the Stephanie Plum series, but they’re silly books that are predictably fun to read.
